Try Moonshine Creek in Balsam. If you can believe this, my only complaint was that there was toooooo much shade (we had some rainy days and none of our stuff would dry). It is a beautiful park, many sites back into a creek. The staff was very friendly too.

Try Fort De Soto in St. Petersburg, FL. It's a county park, not a state park and you can reserve thru www.pinellascounty.org It is likely booked by now but you can also try Florida's awesome state parks at www.floridastateparks.org and it will give you ideas for beach camping. There are many options, depending on where in the state you'd like to visit.
